Thai & Korean fusion - Chicken Noodle Stir Fry

It's been over 6 years since my last post! Maybe I should get back into posting cooking videos again.

This time, it's going to be a fusion instead of the traditional Thai & Laos cooking recipes.  Is that what Canada is made off...fusion of ethnic backgrounds?

Here is a quick video of how to make my popular Stir Fry Noodles.

Secret sauce:  Thai Chilli Paste with Sweet Basil Leaves, spicy Chilli Paste from a Korean instant noodle package, and soy sauce.

Thai Lao Gang Ba - Fish Soup

Today I received the sad news that my Grandfather, at 105 years old, past away in Paksan. How did he maintain his longevity? He meditated about 3 times a day and his diet consisted of rice and fish soup.

Eight years ago, I went back to Thailand and Laos for the first time. During my visit, he asked me to roast him some corn. That was a request I could deliver because I didn't know how to cook Thai & Lao food eight years ago.

I had the corn, so all I needed was to roast it over the open fire pit. The fire was dying so I was rushing frantically to fan the ashes and feed twiggs to catch a spark. The fire kept dying and I ran out of twiggs. I decided to gather more twiggs further from the house.

When I returned, my Grandfather was roasting the corn over the fire with flames! That was embarrassing!

He didn't say anything. He was in his moment. At peace. Roasting the corn. I sat with him. In quiet meditation.

This summer, I had plans to visit him and make this soup....rest in peace Grandpa.

I'll post the video when I get a chance to produce it. In the mean time, I'll share my dad's recipe, which was how Grandpa liked his gang ba.


Thai Lao Fish Soup Recipe for Grandpa Sanoubane:

In a pot, over high heat, add:
15 - 20 cups water
1 fish head or chopped fish with bone
1/2 teaspoon salt
1 teaspoon dried tamerand
1/4 cup tomato slices
5 slices of galanga
3 kaffir lime leaf
1 lemon grass piece, about 2 inches

Cook fish for 10 minutes. Then add:
1 - 2 garlic slices
1/4 cup tomato slices
1/2 teaspoon salt or 2 tablespoon fish sauce
1/4 cup slice sweet onion
Garnish with chopped cilantro & green onion

Serve immediately.

Pun - Thai Lao Lettuce Wraps

It has been a while since my last post and today, I felt ambitious and decided to cook, video tape, and share my Thai and Lao recipes with you.

This recipe is called "Pun" and it means "to wrap". When I host a dinner party for just the girls, I like to prepare pun because we'll eat and socialize and never feel full. Basically, it is a finger food salad recipe. Here's to your health. Cheers!

I grilled firm tofu but you can also pun with Chicken & Shrimp curry skewers, and Fish with Thai Lao Herbs.

Appetizer Recipe: Pun Tofu
Lettuce of any type: Radicchio, Romain, and Boston
chopped tomatoes
chopped cucumber
chopped green onions
chopped coriander or mint
bean sprouts
Spring Roll Dipping Sauce
vermicelli noodle bundle

Tear a piece of lettuce to the size of your palm. Load the listed ingredients on top of the lettuce. Spoon in dipping sauce, wrap, and enjoy. Make sure each lettuce wrap is small so it fits into your mouth.

Lap Shrimp with Escargot

The video shows the raw /fresh lap shrimp and the cooked lap shrimp. Not all lap recipes must have mint so in one recipe, I use cilantro. Lap is the national dish of Laos so please refer to my previous posts lap chicken and lap Lao beef.

Sao Lao T-Shirt - Lao Girl T-Shirt


I got this "Sao Lao" t-shirt.
"Sao" means 'girl' or 'young lady'.

Every August long weekend my cousin, Vilaysith Sanoubane, organizes "bune Lao" which is a fundraiser festival for Wat Lao Veluwanh.

It's an amazing event: a soccer tournament, concert bands, dancing, blessings from Buddhist Monks, food, and Lao merchandise. Over 5000 people attend.

For just one day, it feels like you were in Laos.

I still have a few Sao Laos t-shirts if anyone is interested.

Water Chestnut Dessert Dumplings


These water chestnut dessert dumpling resembles tapioca pearl and but with crunch and colour. The advantage of the water chestnut dessert dumpling over tapioca pearl is that the dumplings do not thicken the dessert as stated in the Tapioca Pearl dessert.

In my video, you'll see that made a dessert drink with green Ai-Yu Jelly, cantaloupe, honeydew melon, the colourful water chestnut dessert dumplings, and fresh coconut milk.
